Eggplant pizzas

This fun alternative to pizza makes a quick and tasty snack, without the starch responsible for tooth decay.

2 medium eggplants
1 lb Roma tomatoes
2 cups grated cheese
Olive oil
2 cloves garlic

  1. Grease a baking tray with olive oil.
  2. Preheat the oven to 400 degrees.
  3. Cut the eggplant into circles about half an inch thick, and place on baking tray. Sprinkle salt on the eggplant circles, to taste.
  4. Cut up the tomatoes into circles about a quarter-inch thick. Place tomato circles on the eggplant, covering as much surface as possible.
  5. Put garlic cloves through a garlic press, and add a touch of garlic to each tomato.
  6. Sprinkle salt, pepper, oregano and basil on top, and then cover each circle with cheese.
  7. Cook for 20 minutes or until cheese is golden-brown.
