Whole-wheat pancakes

This is a tasty, healthy treat for a family breakfast. 

Ingredients:

¾ cup whole-wheat pastry flour
¾ cup all-purpose flour
1 teaspoon baking powder
½ teaspoon baking soda
2 tablespoons sugar
¼ teaspoon salt
½ cup liquid egg substitute
1 cup fat-free milk
1 teaspoon vanilla extract
Low-fat yogurt
Fruit

Instructions:

  1. Preheat griddle.
  2. Whisk dry ingredients in a medium bowl.
  3. Add egg substitute, milk and vanilla extract, and whisk until smooth.
  4. Ladle ⅔ cup of batter onto preheated griddle and cook for 3–4 minutes or until golden.
  5. Top with low-fat yogurt and your favorite fruit.
  6. Enjoy!
